The 2021 Casa Silva Los Lingues Cabernet Sauvignon (93 Points – Descorchados; 90 Points – Wine Enthusiast; 90 Points – James Suckling) is a suave, sophisticated wine that combines the best attributes of New and Old World winemaking. Deep in color, but never thick or syrupy, the 2021 Casa Silva Los Lingues Cabernet Sauvignon offers up a beguiling array of olfactory pleasure. Savory scents of mulberry, blackberry, cassis, cedar, and vanilla greet the nose. With just a little aeration, the wine’s sensuous bouquet intensifies and re-emerges in the mouth, while ripe, racy tannins carry the wine’s fruit and sophisticated flavors to a smooth, satisfying finish. It is hard to believe that this Cabernet Sauvignon is just three years old as it is already a pleasure to drink – testament to Casa Silva’s expertise and the beauty of the 2021 vintage in Colchagua and throughout Chile. Like all fine young Cabernets, we suggest affording the 2021 Casa Silva Los Lingues Cabernet Sauvignon at least 15-20 minutes of aeration before consuming it at cool room temperature (58°-62° F). Anticipated maturity: 2024-2029. Enjoy!
The 2021 Casa Silva Los Lingues Cabernet Sauvignon is one of the rare young Cabernet Sauvignon wines that is truly a pleasure to drink on its own. Unadorned, one has the full effect of the subtle nuances and impeccable balance of this single vineyard Cabernet Sauvignon. Nonetheless, wine is food, and well-chosen accompaniments complement and greatly enhance a meal. With this in mind, consider pairing the 2021 Casa Silva Los Lingues Cabernet Sauvignon with beef tenderloin or any fine cut of beef. Duck à l’Orange; Rotisserie Pork Loin in a pomegranate-walnut sauce; and Grilled Loin Lamb Chops encrusted with a cucumber, garlic, and herb paste also provide wonderful accompaniments to Casa Silva’s 2021 Los Lingues Cabernet Sauvignon. A traditional Chilean dish, Pastel de Choclo, a corn and meat pie, offers a tasty pairing, too. A Creamy Mushroom Risotto, and a Three Cheese Pizza with Cremini, Portabella, and Shitake mushrooms provide additional crowd pleasing companions. And, if you’re stuck, just open the 2021 Casa Silva Los Lingues Cabernet Sauvignon, call a friend, and have a party. Buen Provecho!

The Silva family looks out on to the world from Colchagua Valley, one of the most breathtakingly beautiful wine regions on earth. Located in the heart of Colchagua, an area many critics and writers compare to Napa Valley in the 1960s, a time when innovation, growth, and a plethora of exciting affordable wines abounded, Casa Silva quickly established itself as one of South America’s most exciting and forward-looking wineries. It should then come as no surprise that Casa Silva is the most highly awarded Chilean winery in the 21st century and it was named “Best Winery of Chile – 2020” by Catad’Or Wine Awards, the most prestigious international wine competition in Latin America.
Although the estate’s Colchagua vineyards are the oldest in the region, Casa Silva has only been making fine wine since 1997, the year Casa Silva began bottling premium wines under its own name. However, historical accounts tell us that the Silva family’s predecessors were pioneers in Colchagua more than a century ago, when they brought the first grape varieties from France to their Angostura estate at the base of the towering Andes. Today, the Silvas remain pioneers: they are Colchagua’s foremost experts on Carmenère, Chile’s emblematic red grape variety. Moreover, they are at the vanguard of their nation’s success with Cabernet Sauvignon as well as the production of white wines, especially those from traditional French varietals: Chardonnay, Sauvignon Blanc, Sauvignon Gris, Semillon, and Viognier.
As pioneers in viticulture, the Silvas, along with their masterful oenologist Mario Geise, have established several vineyard estates in Colchagua, each specializing in the production of one or more varietals that are especially suited to that estate’s terroir. From these individual estates, single vineyard offerings are produced that reflect the best that Casa Silva produces, and that is saying a lot. From Los Lingues comes a very flavorful and sophisticated Cabernet Sauvignon as well as the estate’s classic Carmenère. Meanwhile, Lolol specializes in a big, chewy Syrah, which should not be missed.
