This Cabernet Sauvignon displays deep garnet color with expressive aromas of blackcurrant, blackberry, cassis, dark cherry, and ripe plum layered with cedar, cocoa, graphite, and baking spice. Full-bodied with refined tannins and vibrant acidity, the palate delivers concentrated dark fruit supported by notes of espresso, toasted oak, and dark chocolate. Rich yet beautifully balanced, the wine finishes long and elegant, displaying both power and finesse with excellent aging potential.

This Cabernet Sauvignon shines alongside grilled ribeye, filet mignon, roasted lamb, smoked brisket, and braised short ribs. It also pairs exceptionally well with mushroom dishes, rosemary-seasoned potatoes, aged cheddar, Gouda, and blue cheese. Rich winter stews, hearty pasta with beef ragù, and classic steakhouse fare further complement the wine's bold fruit, polished tannins, and savory complexity.

Founded in 1998 by Jerry Brassfield, Brassfield Estate Winery is located within California's High Valley AVA, one of Lake County's most distinctive wine-growing regions. Situated at elevations exceeding 1,600 feet, the estate benefits from volcanic soils, abundant sunshine, and dramatic day-to-night temperature swings that allow grapes to develop exceptional concentration while preserving natural acidity. These unique conditions consistently produce Cabernet Sauvignon with remarkable depth, structure, and balance.

Brassfield farms thousands of acres with a strong commitment to environmental stewardship and sustainable viticulture, preserving native habitats while producing estate-grown fruit of exceptional quality. Every vineyard block is managed individually to maximize site expression, resulting in wines that authentically reflect the rugged beauty of High Valley. The winery has earned recognition for producing premium Cabernet Sauvignon that rivals many of California's more famous regions while showcasing the tremendous potential of Lake County. The 2021 High Valley Cabernet exemplifies Brassfield's dedication to craftsmanship, sustainability, and expressive mountain-grown fruit.
