The superb 2014 Fisher Mountain Estate Cabernet Sauvignon offers gorgeous dark fruit flavors in the form of black cherry, wild blackberry, and plum along with hints of cocoa and finely ground spices. Bold, flavorful, and incredibly textured, the 2014 Fisher Mountain Estate Cabernet Sauvignon exemplifies the greatness of Fisher’s high elevation mountain fruit. Savory and deeply concentrated, this wine exudes richness as well as depth and precision. We would be hard-pressed to find a better California Cabernet Sauvignon at this level. Obviously, we are not alone in our summation as Antonio Galloni’s 93 point rating in Vinous will attest. For optimal enjoyment, we suggest opening and decanting the 2014 Fisher Mountain Estate Cabernet Sauvignon at least thirty minutes before serving at cool room temperature (60°-62° F). The bold-flavored, concentrated 2014 Fisher Mountain Estate Cabernet Sauvignon will elevate almost any meat, pasta, vegetable, or cheese dish to a new level, but whether the dish is simple or complex, Fisher’s Cabernet Sauvignons deserve the finest, freshest ingredients. Prime Filet Mignon in a puff pastry filled with fresh mushrooms, or Seared Wagyu Flank Steak prepared with a honey-lavender glaze, sautéed kale, and butternut squash au gratin make the grade in the company of Fisher’s 2014 Mountain Estate Cabernet Sauvignon. Braised Lamb Shanks provide another tried and true accompaniment. An equally compelling, heart-healthy option calls for Coffee Crusted Bison Filets. The Fishers take a two pronged approach in crafting their award-winning wines: one highlights the truly unique characteristics of single vineyard sites, while the other emphasizes the art of blending small complementary lots of various estate vineyards and varietals in order to create the most balanced, harmonious, and complex wines, as with Fisher’s 2014 Mountain Estate Sonoma County Cabernet Sauvignon (this month’s feature).
