Perfect to make ahead for a great lunch or quick dinner, this hearty soup will fill you up without packing on the pounds.<\/p>\n<h3><img loading=\"lazy\" class=\"alignright size-full wp-image-3015\" src=\"http:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2014\/12\/Vegetable-Soup-with-Basil-Pesto.jpg\" alt=\"Vegetable Soup with Basil Pesto\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2014\/12\/Vegetable-Soup-with-Basil-Pesto.jpg 300w, https:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2014\/12\/Vegetable-Soup-with-Basil-Pesto-150x150.jpg 150w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/>Ingredients:<\/h3>\n<p>2 medium carrots, chopped<br \/>\n2 celery ribs, chopped<br \/>\n1 large sweet onion, chopped<br \/>\n4 garlic cloves, minced<br \/>\n1 teaspoon minced fresh thyme<br \/>\n1 tablespoon olive oil<br \/>\n2 (32-oz.) containers organic vegetable broth<br \/>\n2 plum tomatoes, seeded and chopped<br \/>\n1 medium zucchini, chopped<br \/>\n1 1\/4 teaspoons kosher salt<br \/>\n1\/2 teaspoon freshly ground black pepper<br \/>\n1 (15-oz.) can cannellini beans, drained and rinsed<br \/>\n1\/2 cup uncooked mini farfalle (bow-tie) pasta<br \/>\nBasil Pesto (See Recipe Below)<\/p>\n<h3>Preparation:<\/h3>\n<p>1. Saut\u00e9 carrots and next 4 ingredients in hot oil in a Dutch oven over medium-high heat 8 to 10 minutes or until vegetables are tender. Stir in broth, tomatoes, zucchini, kosher salt, and freshly ground black pepper; bring to a boil. Reduce heat to medium-low, and simmer, stirring occasionally, 10 minutes.<\/p>\n<p>2. Stir in beans and pasta, and cook, stirring occasionally, 10 to 12 minutes or until pasta is tender. Top each serving with 1 to 2 tsp.
