Hearty enough to be served by itself, it&#8217;s the perfect soup to warm you on those cold winter nights!<\/p>\n<h3><img loading=\"lazy\" class=\"alignright size-full wp-image-3010\" src=\"http:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2014\/12\/Sherried-Wild-Rice-Soup.jpg\" alt=\"Sherried Wild Rice Soup\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2014\/12\/Sherried-Wild-Rice-Soup.jpg 300w, https:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2014\/12\/Sherried-Wild-Rice-Soup-150x150.jpg 150w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/>Ingredients<\/h3>\n<ul>\n<li>1\/4 pound bacon, diced<\/li>\n<li>2 russet potatoes (about 1 lb. total)<\/li>\n<li>1 cup wild rice<\/li>\n<li>1 cup diced onion<\/li>\n<li>6 cups fat-skimmed chicken broth<\/li>\n<li>1 teaspoon fresh thyme leaves or dried thyme<\/li>\n<li>1 cup dry sherry<\/li>\n<li>1 cup whipping cream<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<h3>Preparation<\/h3>\n<p>1. In a 4- to 5-quart pan over high heat, stir bacon frequently until crisp, about 5 minutes. With a slotted spoon, transfer bacon to paper towels to drain. Discard drippings from pan or save for other uses.<\/p>\n<p>2. Meanwhile, scrub and peel potatoes. Cut into 1\/2-inch chunks.<\/p>\n<p>3. In same pan, combine potatoes, rice, onion, 4 cups broth, and thyme. Bring to a boil over high heat; reduce heat, cover, and simmer until rice is tender to bite, 1 to 1 1\/4 hours.<\/p>\n<p>4. Add remaining 2 cups broth, sherry, and whipping cream. Bring to a boil over high heat, mashing any potato chunks against the side of the pan with a spoon. Reduce heat and simmer to blend flavors, stirring occasionally, about 10 minutes.<\/p>\n<p>5. Ladle soup into bowls. Top equally with cooked bacon.
