Melt butter, stir in flour; while stirring gradually, pour the wine into the light\u00a0roux, add salt and lemon zest, bring to a\u00a0boil, and stir vigorously, remove from heat, and let cool slightly.<\/p>\n<p>2. Separate eggs. Stir yolks into the mixture. Beat 6 egg whites with granulated sugar until soft peaks form and carefully add to the mixture.<\/p>\n<p>3. Fill\u00a0souffl\u00e9\u00a0mixture 3\/4 of the way into four buttered molds sprinkled with granulated sugar (about 1\/2 cup [1\/8 l] content with flat bottoms).<\/p>\n<p>4. Fill a large ovenproof pan about 2\/5 inch (1 cm) high with\u00a0water, bring to a boil, and\u00a0bake\u00a0the\u00a0souffl\u00e9\u00a0in a water bath in a preheated oven at 410\u00b0F (210\u00b0C) lower heat for about 20 minutes.<\/p>\n<p>5. Remove\u00a0souffl\u00e9s\u00a0from the oven, sprinkle with sugar, and serve.<\/p>\n<p><em>Tip: Serve with current or wine sauce.
