{"id":2263,"date":"2013-11-12T23:42:05","date_gmt":"2013-11-12T23:42:05","guid":{"rendered":"http:\/\/www.winemonthclub.com\/blog\/?p=2263"},"modified":"2013-11-12T23:42:05","modified_gmt":"2013-11-12T23:42:05","slug":"pumpkin-pecan-cheesecake","status":"publish","type":"post","link":"https:\/\/www.winemonthclub.com\/blog\/pumpkin-pecan-cheesecake\/","title":{"rendered":"Pumpkin-Pecan Cheesecake"},"content":{"rendered":"<p>With Thanksgiving Day right around the corner, this luscious Pumpkin-Pecan Cheesecake will be a hit with everyone as it combines the flavors of three holiday favorites: pumpkin pie, pecan pie, and cheesecake!<\/p>\n<p>Yield:\u00a0Makes 12 servings<br \/>\nTotal:\u00a011 Hours, 32 Minutes<\/p>\n<p><img loading=\"lazy\" class=\"alignright  wp-image-2264\" alt=\"Pumpkin-Pecan Cheesecake\" src=\"http:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2013\/11\/Pumpkin-Pecan-Cheesecake.jpg\" width=\"323\" height=\"323\" srcset=\"https:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2013\/11\/Pumpkin-Pecan-Cheesecake.jpg 420w, https:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2013\/11\/Pumpkin-Pecan-Cheesecake-150x150.jpg 150w, https:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2013\/11\/Pumpkin-Pecan-Cheesecake-300x300.jpg 300w\" sizes=\"(max-width: 323px) 100vw, 323px\" \/><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>2 cups\u00a0graham cracker crumbs<\/li>\n<li>1\/3 cup\u00a0finely chopped pecans<\/li>\n<li>5 tablespoons\u00a0butter, melted<\/li>\n<li>3 tablespoons\u00a0light brown sugar<\/li>\n<li>4\u00a0(8-oz.) packages cream cheese, softened<\/li>\n<li>1 cup\u00a0granulated sugar<\/li>\n<li>1 teaspoon\u00a0vanilla extract<\/li>\n<li>4\u00a0large eggs<\/li>\n<li>1 1\/2 cups\u00a0canned pumpkin<\/li>\n<li>1 1\/2 tablespoons\u00a0lemon juice<\/li>\n<li>Praline Topping<\/li>\n<li>Garnishes: coarsely chopped Pecan Pie-Glazed Pecans, fresh sage leaves<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<p>1. Preheat oven to 325\u00b0. Stir together first 4 ingredients in a bowl until well blended. Press mixture on bottom and 1 1\/2 inches up sides of a 9-inch\u00a0springform\u00a0pan. Bake 8 to 10 minutes or until lightly browned.<\/p>\n<p>2. Beat cream cheese and next 2 ingredients at medium speed with a heavy-duty electric stand mixer until blended and smooth. Add eggs, 1 at a time, beating just until blended after each addition. Add pumpkin and lemon juice, beating until blended. Pour batter into prepared crust. (Pan will be very full.)<\/p>\n<p>3. Bake at 325\u00b0 for 1 hour to 1 hour and 10 minutes or until almost set. Turn oven off. Let cheesecake stand in oven, with door closed, 15 minutes. Remove cheesecake from oven, and gently run a knife around outer edge of cheesecake to loosen from sides of pan. (Do not remove sides of pan.) Cool completely on a wire rack (about 1 hour). Cover and chill 8 to 24 hours.<\/p>\n<p>4. Remove sides and bottom of pan, and transfer cheesecake to a serving plate. Prepare Praline Topping; immediately pour slowly over top of cheesecake, spreading to within 1\/4 inch of edge. Garnish, if desired.<\/p>\n<p>Try This Twist! Sweet Potato-Pecan Cheesecake: Substitute 1 1\/2 cups mashed, cooked sweet potatoes for canned pumpkin.
