Curry and pumpkin is a very popular combination and this Thai influenced version of Pumpkin soup does a fabulous job of layering on the flavor and building on the sweetness of the pumpkin without creating a sweet dish.&#8221;<\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1 cup sliced onion<\/li>\n<li><img loading=\"lazy\" class=\"alignright size-full wp-image-2219\" alt=\"Pumpkin Shrimp Curry\" src=\"http:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2013\/10\/Pumpkin-Shrimp-Curry.jpg\" width=\"414\" height=\"390\" srcset=\"https:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2013\/10\/Pumpkin-Shrimp-Curry.jpg 414w, https:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2013\/10\/Pumpkin-Shrimp-Curry-300x282.jpg 300w\" sizes=\"(max-width: 414px) 100vw, 414px\" \/>1 tablespoon minced ginger<\/li>\n<li>1 tablespoon minced garlic<\/li>\n<li>1 chopped plum tomato<\/li>\n<li>1 15-ounce can pumpkin pur\u00e9e<\/li>\n<li>2 cups vegetable broth<\/li>\n<li>1 cup unsweetened coconut milk<\/li>\n<li>1 1\/2 teaspoons curry powder<\/li>\n<li>1\/8 teaspoon cayenne pepper<\/li>\n<li>1 cup roasted butternut squash, roasted and diced<\/li>\n<li>1 pound shrimp, peeled and deveined<\/li>\n<li>1 1\/2 teaspoons fresh lime juice<\/li>\n<li>Steamed rice<\/li>\n<li>Cilantro<\/li>\n<li>Lime zest<\/li>\n<li>Fried shallots<\/li>\n<\/ul>\n<h2>Preparation:<\/h2>\n<p>Heat olive oil in a large saucepan over medium heat. Add onion and ginger; saut\u00e9 until soft, about 8 minutes. Add garlic; cook for 1 minute. Stir in plum tomato and pumpkin pur\u00e9e; cook, stirring frequently, until pumpkin is golden brown, about 10 minutes. Add vegetable broth, coconut milk, curry powder, and cayenne pepper; simmer for 20 minutes. Add butternut squash, shrimp, and lime juice. Simmer until shrimp are cooked and squash is warm. Serve with steamed rice.
