It\u2019s a delicious and flavorful dish that appeals to kids and adults alike. In fact, the recipe headnote reads: \u201cIf there is one recipe in this book that is guaranteed to have your family moaning with gratitude, this is it. After eating these shrimp, a five-year-old has been known to say, \u2018Wow, Mom, thanks!\u2019 And they\u2019ve driven a grown woman to shamelessly lick her plate\u2014in front of everyone.\u201d<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-1868\" alt=\"ingredients2\" src=\"http:\/\/www.winemonthclub.com\/blog\/wp-content\/uploads\/2013\/06\/ingredients2-300x198.jpg\" width=\"298\" height=\"210\" \/>Before we get started, a few words on buying shrimp. Unless you live on the coast and have access to fresh shrimp, it\u2019s best to buy frozen. The \u201cfresh\u201d shrimp you see in the seafood case at the supermarket are almost always thawed frozen shrimp, and you never know how long they\u2019ve been sitting there. Most shrimp are cleaned and flash frozen shortly after being caught, so you\u2019re better off buying frozen shrimp and defrosting them yourself. \u00a0For this recipe, try to find jumbo frozen shrimp (21-25 to a pound) labeled \u201cshell split and deveined.\u201d Come dinnertime, all you have to do is run the shrimp under warm water to quickly defrost and then peel.<\/p>\n<p>Begin by whisking together the water, kosher salt, sugar and chili powder.<\/p>\n<p><a href=\"http:\/\/www.onceuponachef.com\/images\/2013\/04\/shrimp-in-brine.jpg\"><img loading=\"lazy\" alt=\"shrimp-in-brine\" src=\"http:\/\/www.onceuponachef.com\/images\/2013\/04\/shrimp-in-brine.jpg\" width=\"575\" height=\"381\" \/><\/a><\/p>\n<p>Drop the shrimp in the brine and let them sit for about 20 minutes.<\/p>\n<p><a href=\"http:\/\/www.onceuponachef.com\/images\/2013\/04\/garlic-and-ginger.jpg\"><img loading=\"lazy\" alt=\"garlic-and-ginger\" src=\"http:\/\/www.onceuponachef.com\/images\/2013\/04\/garlic-and-ginger.jpg\" width=\"575\" height=\"387\" \/><\/a><\/p>\n<p>Heat the vegetable oil in a large saut\u00e9 pan, and cook the ginger and garlic for one minute.<\/p>\n<p>Add the sugar and cook 1-2 minutes more. Do not let the garlic brown.<\/p>\n<p><a href=\"http:\/\/www.onceuponachef.com\/images\/2013\/04\/adding-sugar.jpg\"><img loading=\"lazy\" alt=\"adding-sugar\" src=\"http:\/\/www.onceuponachef.com\/images\/2013\/04\/adding-sugar.jpg\" width=\"575\" height=\"381\" \/><\/a><\/p>\n<p>Drain the shrimp in a colander.<\/p>\n<p>Then add the shrimp to the pan and cook until done, 3-4 minutes.<\/p>\n<p><a href=\"http:\/\/www.onceuponachef.com\/images\/2013\/04\/cooking-shrimp-1.jpg\"><img loading=\"lazy\" alt=\"cooking-shrimp-1\" src=\"http:\/\/www.onceuponachef.com\/images\/2013\/04\/cooking-shrimp-1.jpg\" width=\"575\" height=\"380\" \/><\/a><\/p>\n<p>Serve the shrimp over white or jasmine rice. The sauce is salty (in a good way) so be sure not to salt the rice. Enjoy!<\/p>\n<div><b>Servings:<\/b> 4<\/div>\n<div id=\"preps\">\n<div>\u00a0<\/div>\n<div>\u00a0<\/div>\n<div>\n<div>Total Time: 30 Minutes<\/div>\n<\/div>\n<\/div>\n<div id=\"rcp_details\">\n<h3>Ingredients<\/h3>\n<h3>For the Brine<\/h3>\n<ul>\n<li>1\/4 cup kosher salt<\/li>\n<li>2-1\/2 tablespoons sugar<\/li>\n<li>2-1\/2 tablespoons chili powder<\/li>\n<li>4 cups water<\/li>\n<li>2 pounds shrimp, peeled and deveined (defrosted)<\/li>\n<\/ul>\n<h3>For Cooking<\/h3>\n<ul>\n<li>1\/4 cup vegetable oil<\/li>\n<li>One 4-inch x 1-inch piece fresh ginger, peeled and finely chopped (about 1\/4 cup)<\/li>\n<li>4 large garlic cloves, peeled and finely chopped (about 2 tablespoons)<\/li>\n<li>4 teaspoons sugar<\/li>\n<\/ul>\n<div>\u00a0Instructions<\/div>\n<div>\n<ol>\n<li>In a medium bowl, combine the salt, sugar, chili powder and water. Whisk until the sugar and salt are dissolved. Drop in the shrimp and let stand at room temperature for 20 minutes.<\/li>\n<li>Heat the oil in a 12-inch saut\u00e9 pan (preferably nonstick) over medium heat. Add the ginger and garlic and cook, stirring constantly with a wooden spoon, for 1 minute. Add the sugar and continue stirring until the garlic is pale gold, 1-2 minutes more. Do not let the garlic turn dark brown.<\/li>\n<li>Drain the shrimp in a colander, and immediately add to the pan. Increase the heat to medium-high and cook, stirring constantly, until the shrimp are pink and barely firm, another 3-4 minutes.
